What is the difference between a diode and a regulator?
I am building a USB charger using a 9v battery, and I was wondering if there is a significant difference between a 5.1v Zener diode, and a 5v regulator.

Um, what does that have to do with diodes and regulators?
Technically speaking, no.
The way a Zener diode works is it’s placed in reverse bias across the power source. When the voltage exceeds the Zener’s breakdown voltage, you wind up with a relatively stable power source. Voltage regulators do a similar thing, but they use a different process than a Zener.
In a power supply for charging, you don’t want to use a Zener. Zener’s are not rated for the kind of current draw. They are primarily used in circuits to maintain a REFERENCE voltage, in situations where you’re going to be drawing very little current from it.
For a charger, you absolutely have to use a voltage regulator. There are designs that might put a zener in there, but it’s being used to drive a reference voltage. Something like a 7805 will work for you, but I will tell you…linear regulators like the 7805 produce heat…the more voltage they regulate down, the more heat. If you can find a DC-DC stepping regulator (also called a buck converter), you’ll get higher efficiency ratings in conversion.
